Plantains
Many Cuban-style meals in Key West are served with slices of sauteed plantain, a starchy, banana-shaped fruit, which tastes somewhat like yams (actuall, I think they are much sweeter when cooked this way).
To select plantains: Choose ripe black-skinned plantains. Plan on 3-4 servings per plantain.
To prepare for cooking: Peel, just as you would a banana. Cut into 1/4 inch slices, on the bias, so slices are oval.
To saute: Saute in 1/4 cup butter (don't use a substitute...will NOT turn out right!), over moderate heat, turning often, for 15 - 20 minutes, until tender.
Serve with your favorite dish...trust me, it goes with EVERYTHING! <grin>
